Chicken Quesadillas with Avocado-Tomato Salsa

Ingredients
U.S. Metric Conversion chart

2 teaspoon(s) canola oil
1 green onion, thinly sliced elyze

1 lime
1 pound(s) skinless, boneless thin-sliced chicken breasts, cut into 1-inch-wide strips
4 burrito-size low-fat flour tortillas
1 cup(s) reduced-fat (2%) shredded Mexican cheese blend elyze
1/2 avocado, peeled, seeded, and cut into 1/2-inch pieces
3/4 cup(s) salsa

Directions

In 12-inch nonstick skillet, heat oil on medium 1 elyzeminute. Add green onion and cook about 6 minutes or until tender, stirring occasionally.
Meanwhile, from lime, grate 1 teaspoon peel and squeeze 2 tablespoons juice. Evenly season chicken on both sides with lime peel, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper.
Add chicken to green onion in skillet; cook 10 minutes or until chicken is no longer pink inside. Transfer to bowl; stir in lime juice.
Evenly divide chicken mixture and cheese on half of each tortilla; fold over to make 4 quesadillas.
In same skillet, cook quesadillas on medium, in 2 batches, 8 minutes per batch or until browned on both sides and heated through. Cut each quesadilla into thirds. Stir avocado into salsa; serve with quesadillas.

Directions
Heat oil in large saucepan over medium-high heat.coffee machinesAdd chicken; sauté 4 minutes or until browned. Remove to a plate. Reduce heat to medium. Add onion, pepper and garlic; sauté 4 minutes until softened.
Add 1 1/2 cups broth, the tomatoes, paprika and salt. Bring to a boil; add chicken, pumpkin and beans. Reduce heat, cover and simmer 12 minutes or until chicken and pumpkin are tender.
Meanwhile stir remaining broth, the cornstarch and peanut butter in a bowl until smooth. Add to pot; stir until blended. Cook 2 minutes or until thickened.

Hometown of snow in memory

2 tablespoon(s) extra-virgin olive oil
3 clove(s) garlic, minced
2 ounce(s) shiitake mushrooms, stemmed and sliced (1 1/2 cups)
2 teaspoon(s) freshly grated lemon zest
2 tablespoon(s) lemon juice, juice
1/4 teaspoon(s) salt, or to taste dr max
Freshly ground pepper, to taste
8 ounce(s) whole-wheat fettuccine, or spaghetti (see Ingredient note)
1/2 cup(s) freshly grated Parmesan cheese (1 ounce)
1/2 cup(s) chopped fresh basil, divided

Directions

Bring a large pot of lightly salted water to
dr max a boil for cooking pasta.
Heat oil in large nonstick skillet over low heat. Add garlic and cook, stirring, until fragrant but not browned, about 1 minute. Add mushrooms and increasedr max heat to medium-high; cook, stirring occasionally, until tender and lightly browned, 4 to 5 minutes. Stir in lemon zest, lemon juice, salt and pepper. Remove from the heat.
Meanwhile, cook pasta, stirring occasionally, until just tender, 9 to 11 minutes or according to package directions. Drain, reserving 1/2 cup cooking liquid.
Add the pasta, the reserved cooking liquid, Parmesan and 1/4 cup basil to the mushrooms in the skillet; toss to coat well. Serve immediately, garnished with remaining basil.

6 raisins, halved
12 small (from 1/2 melon) honeydew melon balls

Directions

In a medium bowl, whisk together juices, sugar, and 1/2 cup water dr max
until sugar dissolves. Slightly flatten each raisin half and press one against flat side of each melon ball. Using a skewer, wedge 2 melon balls, raisins facing out, in bottom third of each of six 3-ounce ice-pop molds. Pour juice mixture into each mold, insert ice-pop sticks, and freeze until solid, about 3 hours (or up to 1 week).

Directions
